It is commonly called as Yangdu Mo, Yangdu Cai and Bianli Jun. According to the fungus category, it belongs to Morchella Dill., Morchellaceae and Pezizaies. Morel consists of pregnant pileus and un-pregnant stem. There are net breaking-outs on the pileus surface and the edges of pileus connect with the stem. The stem is cylinder shape with hollow center and smooth or concave surface. It is the most famous edible mushroom in the ascomycete. The pileus contains 7 kinds of human essential amino acids, such as isoleucine, leucine, lysine, methionine, phenylalanine, threonine and amino-isovaleric acid.
